Your Honey Will Go Solid — Good.

Crystallization is the receipt for raw honey.

Honey is a supersaturated sugar solution — roughly 70% sugars in only 17% water. That is far more sugar than water can hold, so it is chemically desperate to return to a stable state. It does that by dropping its glucose out of solution as crystals. Crystallization is not spoilage, fermentation, added sugar or a fault. It is the single best proof that honey was never pasteurized or ultra-filtered.

How it happens

  1. 1Glucose separates from the water first because it is the least soluble of honey's sugars.
  2. 2It needs a seed — a pollen grain, a wax fleck, an air bubble, a scratch in the jar wall.
  3. 3Crystals grow outward from those seeds; the more seeds, the finer and creamier the set.
  4. 4Cool storage (10–15 °C) speeds it up; below 5 °C or above 25 °C slows it right down.

Why speeds differ

The glucose-to-fructose ratio decides the speed. Dandelion and canola honey can set in days. Knapweed, fireweed and acacia can stay liquid for a year. This batch is a mid-set honey and typically starts to grain at 8–14 weeks.

Bringing it back

  • Stand the open jar in water no hotter than 40 °C and stir every 10 minutes.
  • Repeat with fresh warm water until clear — usually 30–45 minutes for a 500 g jar.
  • Never microwave and never boil: above 45 °C you destroy the enzymes you paid for.
  • Or simply eat it crystallized — spread on toast it is better than liquid.

The Hive Superfood

Bee bread, made in your kitchen.

Bee bread is pollen the bees have packed into a comb cell, capped with honey and left to lacto-ferment. That fermentation breaks the tough pollen exine wall, drops the pH and multiplies the bioavailability of the amino acids, B vitamins and enzymes inside. It is the colony's protein store — and one of the most nutrient-dense foods on the planet.

You need

  • 100 g Similkameen Wildflower Pollen, fresh or frozen (not desiccated)
  • 30 g Princeton Valley Gold raw honey
  • 10 ml unchlorinated water
  • Optional: 5 g raw honey reserved for the top seal

Start with a quarter teaspoon if you have never taken hive products. Not for infants under one year, or for anyone with a known bee-product allergy.

Method

  1. 01Sanitize a small glass jar with boiling water and let it dry fully — no soap residue.
  2. 02Loosen the honey with the water to a pourable syrup. Do not warm it above 35 °C.
  3. 03Layer pollen into the jar 1 cm at a time, tamping each layer firm with the back of a spoon. Air pockets cause mould instead of ferment.
  4. 04Pour the honey syrup over each layer so it wicks down and every granule is wet.
  5. 05Finish with a 5 mm honey cap on top — this is the bees' own anaerobic seal.
  6. 06Lid loosely and hold at 18–22 °C in the dark for 14 days, burping every second day for the first week.
  7. 07It is ready when it smells faintly of sourdough and the granules have gone soft and darkened.
  8. 08Move to the fridge. Keeps 6 months. Eat 1–2 teaspoons a day.

  • A teaspoon straight, chewed slowly, first thing in the morning.
  • Stirred through yoghurt with a thread of Princeton Valley Gold.
  • Blended into a post-ridge recovery smoothie with berries and kefir.
  • Crumbled over oatmeal — never cooked, always added off the heat.

Honey never spoils

Low water activity plus bee-added glucose oxidase makes honey self-preserving. Edible 3,000-year-old honey has been recovered from Egyptian tombs.

Bees dance in dialects

The waggle dance encodes direction relative to the sun and distance in dance duration — and different subspecies use measurably different distance scales.

A colony is one animal

A hive holds its brood nest at 34.5 °C year-round by shivering and fanning. We treat the colony as a single superorganism, which is why the 3H standard grades the whole hive, not single frames.

A queen mates with 12–20 drones in a handful of flights, stores that sperm for life, and can lay her own body weight in eggs every day at peak.
