Reading mode

Honey leaves the hive finished. The bees have already done the hard chemistry — invertase breaking sucrose into glucose and fructose, glucose oxidase laying down a hydrogen-peroxide antimicrobial reserve, and evaporative fanning driving off water until the comb is capped. Everything we do after the frame leaves the colony is protection, not improvement. Protect it from moisture, from contamination, and from heat, and it will outlast every product on your shelf. Fail at any one of those three and you will lose a batch to fermentation, off-flavour, or a food-safety complaint — all preventable with discipline learned once and repeated every season.

The honey house is where good beekeeping is either preserved or thrown away in an afternoon of shortcuts.

Before the honey house: pulling the right frames

Extraction problems start in the field, not the honey house. A frame should be at least 80% capped before it is pulled for harvest — capped honey has already been dried by the bees to a safe moisture content, and pulling wet, uncapped nectar to save a trip is the single most common cause of fermenting honey in a small operation.

  • Shake or brush bees gently off each frame before boxing; never use gasoline-powered blowers with unfiltered engine exhaust near open comb.
  • Use a fume board with a natural almond-oil-based bee repellent for clearing supers on hot days rather than working frame by frame in full sun.
  • Stack pulled supers bee-tight and transport them covered — an open truck bed on a warm afternoon becomes a robbing magnet within minutes.
  • Never pull frames that smell fermented, show visible mould, or carry any sign of brood disease; those go to the burn barrel or a diagnostic sample, not the extractor.
